I fell in love with Texas BBQ back in 1997 after my first bite of a chopped brisket sandwich from Iron Works in Austin, TX.
While attending grad school in Austin from 2002-2005, I enjoyed my fair share of good BBQ. When I returned to Austin in 2012, it became an obsession! I needed to teach myself how to make this wonderful food the way my cooking heroes prepared it– the old-fashioned, time-intensive way with a low offset wood fire. No shortcuts! I bought my first offset wood-burning smoker in 2016 and the journey began. Seven years later, when I knew I wanted to leave the teaching field, I came up with a plan…
I started popping up in local kitchens with my barbecue while working full time last winter. It wasn’t easy, but it felt like literally living the dream. Things went well enough that we bought a larger smoker and eventually, I was able to focus on cooking as my main pursuit.
